The carob is a gluten-free food and therefore can safely be consumed by those suffering from celiac disease. Food in Sicily offers a wide range of products based on Sicilian carob, such as carob seed flour, which has the property of absorbing water, is in some cases a valid anti diarrheal, on the contrary, the pulp of fresh carob has laxative properties. Carobs have a taste that recalls that of cocoa with the difference, however, of being richer in nutritious properties and less caloric; carobs do not contain psychoactive substances and for this reason they represent a valid substitute of chocolate for those people who have problems of allergy or intolerance to the latter.
