Variety and winemaking
Grillo grapes are harvested towards the end of August, at the time of the maximum expression of aromatic freshness and at night to retain their fragrant acidity; They are then subjected to subsequent vinification in white with pressing and soft pressing to extract only the most fragrant and elegant must.
From the fermentation at controlled temperature of 18 ° C, the so -called basic wine is obtained which is kept on its yeasts until the moment of sparkling wine.
Then after the addition of selected yeasts, the basic wine is subjected to natural reformation in autoclave at a temperature of 13- 14 ° C for 8-10 days. Once the desired sugar residue has been reached, it cools quickly to -2/3 degrees to block fermentation and to allow tartaric stabilization.
The sparkling wine is subsequently matured for about 2/3 months on its yeasts and finally filtered and bottled at low temperature to maintain and preserve its characteristics at best.
Organoleptic characteristics
Color: slight straw yellow, with elegant greenish reflections. Perfume: fresh, intense and persistent, very fruity and fine, expresses aromas of acacia flowers and wisteria, together with the delicate scent of fresh fruit such as apple, pear and fishing as well as elegant shades of white flowers (magnolia and thrush). Taste: in the mouth it is dry and fresh, fragrant with strong acidity and minerality. Perlage: persistent, elegant and fine.
