Sparkling Wine "Accussì" Extra Dry Grillo, 75 cl

COMBINATIONS

Excellent as an aperitif, with raw fish, fresh or slightly mature cheeses, with first courses based on fish and vegetables, with white meats, and second courses based on fried fish.

VARIETY AND WINEMAKING

Grillo grapes are harvested towards the end of August, at the moment of maximum expression of aromatic freshness and at night to preserve their fragrant acidity; they are then subjected to subsequent white vinification with crushing and soft pressing to extract only the most fragrant and elegant must. 

From fermentation at a controlled temperature of 18°C, the so-called base wine is obtained which is stored on its yeasts until it is made into sparkling wine.

Therefore, after the addition of selected yeasts, the base wine is subjected to natural refermentation in an autoclave at a temperature of 13-14°C for 8-10 days. Once the desired pressure and sugar residue has been reached, it is rapidly cooled to -2/3 degrees to stop fermentation and to allow tartaric stabilization.

The sparkling wine is then left to mature for approximately 2/3 months on its yeasts and finally filtered and bottled at low temperature to best maintain and preserve its characteristics.

ORGANOLEPTIC CHARACTERISTICS

Color: light straw yellow, with elegant greenish reflections. Bouquet: fresh, intense and persistent, very fruity and fine, it expresses aromas of acacia flowers and wisteria, together with the delicate scent of fresh fruit such as apple, pear and peach as well as elegant nuances of white flowers (magnolia and lily of the valley).  Taste: dry and fresh in the mouth, fragrant with marked acidity and minerality. Perlage: persistent, elegant and fine.
