Our pasta is produced using ancient Sicilian wheat cultivars of our production.
The totally artisanal processing with a very long drying allows you to keep the organoleptic properties of wheat unaltered and guarantees the pasta a porosity that allows greater absorption of condiments (excellent with homemade sauces) beyond a high digestibility that eliminates the sense of heaviness, typical of the other pasta.
