Paul Bricius' Special Ale is a gold-orange colored beer with a slight opaqueness from refermentation, a rich and firm foam; It is characterized by complex and elegant aromas of light honey, chamomile, wheat, citrus fruits and long-lasting resins.
In the mouth, a slightly pronounced yet subtle bitterness contrasts little with the citrus sweetness.
In the aftertaste the bitter and fruity follow one another for a long time without ever prevailing over each other, an evolution of scents that remain intense, pleasant and prolonged on the palate.
Pairings: Beer throughout the meal with a predilection for appetizers, stuffed pizzas and delicate dishes.

Paul Bricius Brewery
Paul-Bricius was founded in 2004 in Vittoria in the province of Ragusa, as an artisanal microbrewery.
The main activities are the production, bottling and distribution of beer produced following an ancient artisanal method.
Since 2012 the brewery has decided to undertake the cultivation of two-row barley, suitable for the production of beer.
In response to this, the company has cultivated land in Santa Caterina di Villarmosa (CL), an area particularly suited to the cultivation of cereals, obtaining barley with significant bromatological qualities.
Since 2021, Paul-Bricius has been producing brewing malt by introducing some innovations into the supply chain through the use of innovative raw materials such as high quality two-row barley and Sicilian "ancient grains".
Barley cultivation takes place in an optimal pedoclimatic environment and in a short supply chain. This allows for greater quality control on the main raw material used for production: malt.
The production plant has an open tank boiler heated by direct flame and allows a different production process compared to the methods now abandoned by every modern brewery.
The "open space" type of cooking allows both visual and manual control of the entire production cycle
The system also allows the proteins that coagulate at high temperatures to be foamed
The production phase allows us to best express the creativity and imagination of the brewmaster and consequently also the personality of our beers, with an original and perfectly traceable taste.
