Slightly lively wine, excellent as an aperitif, it goes well with raw fish, fresh or slightly mature cheeses, with first courses based on fish and vegetables, with white meats, and second courses based on fried or baked fish.
Wine obtained from Grillo grapes grown in our wineries located in the south-east of Sicily, in the province of Ragusa, and in the west, in the province of Agrigento, where the different environmental conditions allow us to obtain grapes with a different aromatic style. In fact, if on the one hand the proximity to the sea of the vineyards cultivated at the Ragusa company and the loose and warm soils allow us to obtain more fruity and fragrant wines, on the other, the more clayey and fertile soils of the company located near Agrigento give the grapes more concentration, maturation, richness and volume. From the union of these two different styles, the richness and fruitfulness of our slightly moved wine is born.
PROCESSING METHOD
The grapes are harvested between the middle and the end of August, destemmed and crushed, subjected to soft pressing, and subsequent white vinification of the musts with alcoholic fermentation carried out by selected yeasts at a temperature of 16-18°C for a duration of 7-9 days. The low fermentation temperature preserves this natural liveliness in the wine which makes it cheerful andlively on the palate.
