The leavening according to Fiasconaro

Fiasconaro had a gift 15 years ago 65 year old mother yeast by a Lombard pastry chef. 

Every evening at 8pm the ritual of regenerating the strain in the water is celebrated. A solemn moment!

The rest of the time leavening, 36 hours, no vacuum technology, 24 hours for natural dehumidification.

An unmistakable sign of recognition of Fiasconaro baked goods is precisely natural leavening, a very slow fermentation process that lasts 36 hours. 

There natural leavening it originates in the "mother", a nucleus of fermented pasta to which water and flour are gradually added. 

It is a process that has always been renewed, keeping itself the same and with the same rhythm, and which, in order to occur, requires skill, attention and, above all, the non-use of chemical additives and preservatives, while guaranteeing the product a surprisingly long "life".
